Hi Matt. I think you need to start at the beginning and try to understand what makes a good picture. Have a read of the tutorials on a site like this:

PhotoZone or ephotozine.

People tend to start with landscapes because they appear simple, how hard can taking pictures of the seaside be?, but in fact it's very dificcult to compose a good landscape shot.

You need something to lead your eye into or around the picture, if you have neither a focal point or lead-in lines your viewer's eye will wander and you will not gain their attention.

Good landscape photographer's make it look easy. You will often find yourself looking at a landscape thinking 'wow' but not really knowing why if you don't understand the technique and appreciate the composition.

Before you press the shutter, ask yourself why you are taking the picture, what are you trying to portray? If it's a happy child playing by the sea then the child should be prominent in the frame; you need to get close to your subject. If it's a tranquil sunset then place the horizon along the bottom third of the frame with a foreground subject up close to give a sense of scale and depth.

I'm not really a landscape photographer so can't give specific expert advice. I do have some nice travel shots and can post a few as examples if you like, but your best bet is to read and learn as much as you can, ask plenty of questions and get on your course.
